Description
The process of creating black tea involves withering the leaf after harvest to reduce moisture, then rolling the leaf to break cell membranes and release enzymes, then “fermentation” — which we now know to be chemically a form of enzymatic oxidization (rather than true fermentation which involves bacteria).
One factor in creating the flavor is the degree to which a producer allows the leaf to “ferment”
